Walking tacos are a handheld, no-plates-needed dinner where crushed corn chips are loaded in individual bags with taco-seasoned beef and melted cheddar. Build-in-bag with crunchy chips, savory meat, and fresh toppings like lettuce, tomatoes, salsa, and sour cream.

Ingredients
  

Ground beef and taco seasoning
  • 1 lb ground beef Use 80/20 for best flavor and texture.
  • 1 taco seasoning Use 1 packet; follow package instructions for seasoning liquid amount.
Walking taco base
  • 6 corn chips Individual bags (like Fritos) crushed inside for the walking-taco crunch.
  • 2 cup shredded cheddar cheese Cheddar melts quickly over hot beef.
Fresh toppings
  • 1 cup shredded lettuce Keep chilled so it stays crisp.
  • 0.5 cup diced tomatoes Dice evenly for a consistent bite.
  • 0.5 cup salsa Choose mild or medium to control heat.
  • 1 sour cream Serve on top; add more to taste.

Method
 

Cook the seasoned beef
  1. Heat a cast iron skillet over medium-high heat, add the ground beef, and cook until browned, 8-10 minutes, stirring and breaking it up so no large chunks remain.
  2. Reduce heat to medium, stir in the taco seasoning with the amount of water listed on the packet, and simmer until thickened and evenly coated, 2-3 minutes, until you can see specks of seasoning throughout the meat.
Build the bags
  1. Crush the corn chips inside each individual bag lightly, 10-15 seconds per bag, leaving some larger pieces for extra crunch.
  2. Cut or tear open the top of each bag, opening it wide enough to add toppings without spilling, and set the open bags upright on a serving tray.
  3. Spoon the hot seasoned beef into each bag over the crushed chips until the chips are well covered, 1-2 heaping spoonfuls per bag, so the heat can melt the cheese.
  4. Sprinkle shredded cheddar over the beef in each bag, 1/3 to 1/2 cup per bag, until it visibly covers the surface.
  5. Add shredded lettuce, diced tomatoes, and salsa into each bag in separate layers so the colors show, 1-2 spoonfuls each, for a fresh, crisp bite.
  6. Finish each bag with sour cream on top, 1-2 dollops per bag, so it looks creamy against the melted cheese.
Serve
  1. Hand out the bags with a fork and let everyone eat straight from the bag, serving immediately while the cheese is still melted and the chips are crunchy.

Notes

Pro tip: Keep toppings in small bowls and set up a quick buffet so everyone can customize their bag. Store assembled bags in the fridge for up to 1 day, but assemble close to serving for best crunch; freeze is not recommended because chips soften.
