Method
Bake the vanilla cake layers
- Preheat the oven to 350°F and grease two 8-inch cake pans.
- Whisk together the all-purpose flour, baking powder, and salt until evenly combined.
- Cream the butter and granulated sugar until light and fluffy, then beat in the eggs one at a time.
- Alternate adding the dry ingredients and milk, mixing until smooth, then stir in the vanilla extract.
- Divide the batter between the pans and bake for 25-30 minutes until a toothpick comes out clean.
Frost and decorate
- Cool completely, then tint the buttercream frosting jade-green and frost the layers.
- Decorate with edible flowers or herbs for a botanical Virgo-themed finish.
Notes
For the smoothest, cleanest jade-green sides, chill the cake layers before frosting so the buttercream sets more neatly. Store assembled cake covered in the fridge up to 3 days; freeze unfrosted layers up to 2 months (thaw overnight in the fridge), and frost after thawing. If you want an easy swap, use a vanilla-flavored frosting or a dairy-free buttercream so the flavor stays classic while accommodating dietary needs.
