Preheat and season

Sear the chops

Bake with garlic butter
  1. Add butter, garlic, and thyme to the pan, spooning the melted butter over the chops.
  2. Transfer the skillet to the oven and bake for 12–15 minutes, until the pork reaches 145°F.
Finish the pan sauce
  1. Stir lemon juice into the pan sauce and spoon over the chops before serving.

Notes

For the juiciest pork chops, start checking doneness at 12 minutes and pull the skillet as soon as the internal temperature hits 145°F, then rest briefly while you spoon the sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet with a splash of water or broth until warmed through. Freezing is not recommended for best texture. For a lower-sodium option, use a no-salt-added seasoning blend in place of extra salt while keeping pepper.
