Prep
- Preheat the oven to 375°F and grease a baking dish.
- Toss the elderberries with granulated sugar and cornstarch, then spread evenly in the baking dish.
Make the crumble
- Cut the cold butter into the flour and brown sugar until coarse crumbs form.
- Sprinkle the crumble topping evenly over the berries.
Bake and serve
- Bake for 35-40 minutes at 375°F, until the topping is golden and the filling bubbles at the edges.
- Cool for 15 minutes before serving.
Notes
For the cleanest jammy filling, spread the elderberries in an even layer so they bubble consistently at the edges. Refrigerate leftovers in a covered container for up to 4 days; rewarm in a 300°F oven until heated through. Freezing is not recommended for best crumble texture. Dietary swap: use a gluten-free 1:1 all-purpose flour blend to make the topping gluten-free.
