Method
 

Stir-fry the base
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering. This cue helps the rice and chicken heat quickly without steaming.
  2. Add the frozen peas and carrots and cook for 2-3 minutes until tender. Stir occasionally so they thaw and develop a light, glossy sheen.
  3. Push the vegetables to one side and scramble the large eggs on the other side of the pan. Cook until just set, then gently mix with the vegetables.
  4. Add the cooked, cooled rice and diced cooked chicken, breaking up any clumps, then stir everything together. Keep the pan hot so the mixture turns steamy at the edges.
Season and melt the cheddar
  1. Pour in the soy sauce and stir-fry for 3-4 minutes until heated through. Continue stirring so the seasoning coats the rice evenly.
  2. Remove from heat and stir in the shredded cheddar cheese until melted, then top with the green onions. The visual cue is a smooth, lightly stretchy cheese coating.

  1. Pack the fried rice hot into a preheated thermos to keep warm until lunchtime. Fill quickly and seal right away to trap heat.

Notes

Store leftovers in the refrigerator up to 3 days; reheat until steaming. Freezing is not recommended for the best texture of the rice and eggs.
