Method
 

Make the peach mousse
  1. Whip heavy cream, powdered sugar, and vanilla extract on medium-high until stiff peaks form, 3-5 minutes (look for the whisk leaving ridged tracks).
  2. Gently fold half the diced peaches into the whipped cream until no streaks remain, using light strokes to keep the mousse airy.
Assemble the trifle
  1. In a large trifle bowl, layer pound cake cubes with a spoonful of peach preserves, then spoon in peach mousse, and add a layer of diced peaches.
  2. Repeat the layering pattern until the bowl is full, pressing lightly to settle without crushing the cake.
  3. Top with the remaining diced peaches and a sprig of fresh mint for visible color on the surface.
Chill and serve
  1. Refrigerate the trifle for at least 2 hours before serving so the layers set and hold their shape.

Notes

Pro tip: use very ripe peaches and fold them in gently right after whipping so the mousse stays light and spoonable. Store covered in the refrigerator for up to 3 days; the trifle is best within this window for clean layers. Freezing is not recommended due to texture changes in whipped cream.
