Pickle base
  • 2 cup dill pickle brine Use the liquid from dill pickles for full tangy flavor.
  • 1 cup chopped dill pickles Chop into small pieces so they freeze evenly and stay visible.
  • 1 tbsp fresh dill Finely chop for dill flecks throughout.
  • 0.125 tsp red pepper flakes Start with a small pinch; adjust heat to taste.
  • 1 popsicle molds Use with sticks and freeze in a tray or flat surface for stability.

Method
 

Make the pickle mixture
  1. Combine dill pickle brine, chopped dill pickles, and fresh dill in a bowl until evenly mixed.
  2. Add a pinch of red pepper flakes and stir to distribute the spice.
Freeze into pops
  1. Pour the mixture into popsicle molds with sticks inserted so the liquid fills the mold evenly and the sticks stay centered.
  2. Freeze for 6 hours until solid, with a fully set center visible when unmolding.
  3. Unmold and serve frosty immediately for the coldest, most crisp bite.

Notes

For clean unmolding, run the mold under warm water for 10–15 seconds before pulling. Keep leftovers covered in the freezer for up to 2 months. Freezing is best; reheating isn’t recommended. For a dairy-free and vegan-friendly option, use pickle brine and dill pickles only—avoid any products with added dairy.
