Prep and preheat
- Preheat the oven to 425°F and line a large sheet pan with foil as a nonstick surface for easy cleanup.
Toss with oil and seasoning
- Combine the smoked sausage, sweet potatoes, apples, and onion in a large bowl.
- Drizzle with olive oil and add paprika, garlic powder, salt, and pepper, tossing until everything is evenly coated.
Roast until tender
- Spread the mixture in a single layer on the prepared sheet pan so the vegetables roast instead of steam.
- Roast for about 30 minutes, stirring halfway through, until the sweet potatoes are tender and the apples are caramelized with browned edges.
Finish and serve
- Garnish with chopped fresh thyme before serving for a fresh, herbal finish.
Notes
For best caramelization, keep the vegetables in a single layer and avoid crowding the sheet pan. Store leftovers in the refrigerator up to 3 days; reheat in a 400°F oven or skillet until warmed through. Freezing is not recommended because sweet potatoes and apples can soften too much. For a lighter option, use turkey sausage instead of smoked sausage.
