Ingredients

1 pound cake, cubed
  • 1 lb pound cake Cube before layering.
3 cups heavy cream
  • 3 cup heavy cream Chill for best whipping volume.
1/2 cup powdered sugar
  • 0.5 cup powdered sugar
1 teaspoon vanilla extract
  • 1 tsp vanilla extract
2 cups strawberries, sliced
  • 2 cup strawberries Slice for layering.
2 cups blueberries
  • 2 cup blueberries
1/4 cup strawberry preserves
  • 0.25 cup strawberry preserves

Equipment

  • 1 stand mixer

Method

Make the whipped cream
  1. Whip heavy cream, powdered sugar, and vanilla extract on medium-high speed until stiff peaks form, about 3–5 minutes, stopping when the whisk leaves distinct ridges in the cream.
Layer the trifle
  1. In a large trifle bowl, layer pound cake cubes, spoon strawberry preserves, whipped cream, strawberries, and blueberries, then lightly press each layer down so it settles evenly.
  2. Repeat the layers one more time, building height and keeping the topping mixture consistent so the stack doesn’t tilt.
  3. Arrange the final layer of berries on top in a red-white-blue pattern, using strawberries for red and blueberries for blue, with whipped cream filling any white space, until the surface is fully covered.
Chill and serve
  1. Refrigerate the trifle for at least 2 hours so the layers set, looking for a firmer, sliceable structure when you gently tap the bowl.

Notes

Pro tip: for maximum volume and a stable trifle, whip cold heavy cream until the peak holds their shape, then assemble promptly. Refrigerate covered for up to 3 days; the cake will soften over time but stays tasty. Freezing is not recommended because the whipped cream can weep when thawed. For a lighter option, use a reduced-fat whipped topping instead of heavy cream and powdered sugar if you want a less rich texture.
