Cook and prep
- Cook the quinoa in the water according to package directions, then fluff and set aside.

Mix casserole filling
- In a large bowl, combine the cooked quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin, and chili powder.
- Season with salt and pepper, then stir in half the cheddar and half the mozzarella cheese.
Bake and finish
- Transfer the mixture to the prepared baking dish and top with the remaining cheese.
- Bake for 30-40 minutes until bubbling and the cheese is melted and golden.
- Top with diced avocado and extra cilantro before serving.
