Prep
- Preheat the oven to 350°F and grease a loaf pan.
- Chop the walnuts fairly fine so the streusel holds together better on top of the batter.
Make the pumpkin batter
- Whisk together pumpkin puree, vegetable oil, and eggs until smooth.
- Fold in flour, granulated sugar, pumpkin pie spice, and baking soda until just combined, with no dry flour streaks.
Make the maple walnut streusel
- Combine flour, brown sugar, maple syrup, chopped walnuts, and melted butter until crumbly.
Assemble & bake
- Pour the batter into the loaf pan and sprinkle the maple walnut streusel evenly over the top, covering most of the surface.
- Bake for 60-70 minutes at 350°F, until a toothpick inserted in the center comes out clean and the top looks set and lightly browned.
Notes
For best topping crunch, keep the streusel crumbly (not paste-like) and avoid overmixing the batter so the loaf stays tender. Store tightly wrapped in the refrigerator for up to 4 days; freeze sliced portions for up to 2 months and thaw overnight in the fridge. For a nut swap, replace walnuts with pecans using the same amount.
