Preheat and prep

Combine batter

Bake
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
Cool and slice
- Cool the loaf fully before slicing so it holds together and the crumb sets.
Notes
Use very ripe, spotty bananas for the most natural sweetness and moisture; if your pumpkin puree is thick, stir until smooth before mixing. Cool completely before slicing for cleaner cuts that don’t crumble. Store covered at room temperature up to 2 days or refrigerate up to 5 days; freeze slices in a freezer-safe bag up to 2 months. For a slightly lighter option, replace half the vegetable oil with unsweetened applesauce (keep total liquid similar) and mix just until combined.
