Ingredients

oatmilk
  • 1 cup oatmilk
pecan syrup or brown sugar with vanilla
  • 2 tbsp pecan syrup or brown sugar with a splash of vanilla Use pecan syrup; if substituting, simmer brown sugar with a splash of vanilla until smooth.
espresso
  • 2 shots espresso
whipped cream topping
  • 1 Whipped cream, for topping
toasted pecans
  • 2 tbsp chopped toasted pecans Toast in a dry skillet for a few minutes before chopping, if starting from raw pecans.

Equipment

  • 1 small saucepan
  • 1 milk frother

Method

Warm and combine
  1. Warm the oatmilk with pecan syrup in a small saucepan over medium heat, whisking until combined and heated through, about 3-4 minutes. Keep the mixture just hot enough to steam, not boiling, and look for an even golden color.
  2. Froth the pecan oatmilk with a milk frother until light and foamy, about 30-60 seconds. Stop when the foam looks thick and creamy rather than bubbly.
Assemble the latte
  1. Pour the espresso into a mug. Fill the mug first so the espresso forms the base under the frothed milk.
  2. Top with the frothed pecan oatmilk. Pour slowly so the foam settles in a smooth layer over the espresso.
  3. Finish with whipped cream and a sprinkle of chopped toasted pecans. Add the nuts last so they stay crunchy on top.

Notes

For the deepest nutty flavor, toast whole pecans in a dry skillet for a few minutes, then chop before using. Store leftover oatmilk mixture (without topping) in the fridge up to 2 days and reheat gently; whipped cream and pecans are best added fresh. Freezing is not recommended because oatmilk and foam texture can break. If you want it dairy-free and egg-free, choose plant-based whipped cream made for dairy-free topping.
