Whip the ice cream base
- Whip the heavy whipping cream in a large bowl until stiff peaks form, then keep it cold while you mix the rest.
- Whisk the sweetened condensed milk and vanilla extract together, then fold the mixture into the whipped cream until smooth and lightly fluffy.
Make the peach and crumble layers
- Toss the diced fresh or canned peaches with cinnamon until evenly coated, then set aside.
- Stir the crushed graham crackers or shortbread cookies with the melted butter to form a crumbly mixture with no dry patches.
Assemble and freeze
- Layer the ice cream base, peaches, and crumble into a loaf pan, swirling gently with a spoon for cobbler-style ribbons.
- Freeze for at least 6 hours until firm enough to scoop.
Notes
For the best cobbler crunch, use ripe juicy peaches or well-drained canned peaches, and toast the crumble in a dry skillet for a few minutes before mixing with the melted butter (then cool before layering). Store covered in the freezer up to 2 months; thaw 3–5 minutes before serving. For a lighter option, swap half of the heavy whipping cream with full-fat Greek yogurt, noting the texture will be softer but still scoopable.
