Make the chipotle marinade
- Whisk together the chipotle paste, honey, tomato puree, garlic, lime juice, and salt for the marinade until smooth.
- Add the chicken pieces and toss until fully coated.
Roast chicken and pineapple
- Preheat the oven to 400°F, then spread the marinated chicken on a baking tray in an even layer.
- Scatter the pineapple chunks over the top so they sit among the chicken pieces.
- Roast for 30 minutes at 400°F until the chicken is cooked through and the pineapple is caramelized at the edges.
Char tortillas and assemble
- Char the tortillas in a hot dry skillet, then keep them warm.
- Squeeze the remaining lime juice over the roasted chicken and pineapple, then toss with the chopped shallot until glossy.
- Fill each tortilla with the chicken and pineapple mixture, then top with avocado and cilantro.
Notes
For the juiciest chicken, spread the pieces in a single layer so they roast rather than steam. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended for best texture. For a gluten-free option, use corn tortillas and check that any chipotle paste is labeled gluten-free.
