Ingredients
  

Chicken and pineapple
  • 1.5 lb boneless, skinless chicken breast
  • 2 cup fresh pineapple chunks
  • 2 tbsp chipotle paste
  • 2 tbsp honey
  • 2 tbsp tomato puree
  • 2 cloves garlic, crushed
  • 2 tbsp lime juice
  • 0.25 salt to taste
  • 1 shallot, finely chopped
To finish
  • 1 avocado, cubed
  • 1 corn or flour tortillas enough for serving
  • 0.25 fresh cilantro, for garnish

Method
 

Make the chipotle marinade
  1. Whisk together the chipotle paste, honey, tomato puree, garlic, lime juice, and salt for the marinade until smooth.
  2. Add the chicken pieces and toss until fully coated.
Roast chicken and pineapple
  1. Preheat the oven to 400°F, then spread the marinated chicken on a baking tray in an even layer.
  2. Scatter the pineapple chunks over the top so they sit among the chicken pieces.
  3. Roast for 30 minutes at 400°F until the chicken is cooked through and the pineapple is caramelized at the edges.
Char tortillas and assemble
  1. Char the tortillas in a hot dry skillet, then keep them warm.
  2. Squeeze the remaining lime juice over the roasted chicken and pineapple, then toss with the chopped shallot until glossy.
  3. Fill each tortilla with the chicken and pineapple mixture, then top with avocado and cilantro.

Notes

For the juiciest chicken, spread the pieces in a single layer so they roast rather than steam. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended for best texture. For a gluten-free option, use corn tortillas and check that any chipotle paste is labeled gluten-free.
