Make the graham cracker bases
- Mix graham cracker crumbs with melted butter until evenly coated, then press into the bottom of a lined mini muffin tin to form bases with compact sides.
- Place the tin on a sheet pan and chill the bases while you make the filling and sauce.
Make the cheesecake filling
- Beat cream cheese, powdered sugar, and vanilla until smooth and fluffy, scraping the bowl as needed for no lumps.
Make the berry sauce
- Simmer mashed berries with sugar for 5 minutes, stirring until the mixture looks slightly thickened and glossy.
- Cool the berry sauce completely so it swirls without melting the cheesecake filling.
Assemble and set
- Pipe the cheesecake filling over the graham bases, then swirl in the cooled berry sauce on top.
- Refrigerate for at least 2 hours, until set and firm to the touch.
- Pop out of the tin and serve chilled.
Notes
For the cleanest set, soften the cream cheese fully before beating and cool the berry sauce completely before swirling. Store covered in the refrigerator for up to 4 days. Freeze in a sealed container for up to 1 month; thaw overnight in the fridge. For a lighter option, use reduced-fat cream cheese and keep the berriesauce the same for a similar swirl texture.
