Preheat and mix the filling

- Stir together the cream cheese, condensed cream of chicken soup, cottage cheese, sour cream, onion powder, garlic powder, and black pepper until smooth.
- Stir in the shredded chicken and sliced scallions until evenly combined.
Assemble and bake
- Transfer the mixture to a 9x9-inch baking dish and spread into an even layer for uniform baking.
- Toss the crushed Ritz crackers with the melted butter, then sprinkle evenly over the casserole for a crisp top.
- Bake uncovered for 40 minutes at 350F, until the casserole is golden and bubbling.
Notes
Pro tip: soften the cream cheese to room temperature for a lump-free filling. Store covered in the refrigerator up to 3 days. Freeze in an airtight container up to 2 months; thaw in the fridge overnight and reheat until hot. For a lower-fat swap, use low-fat cream cheese and light sour cream.
