Ingredients
  

Sourdough bread
  • 4 sourdough bread
White cheddar cheese
  • 1 cup shredded white cheddar cheese
Peach
  • 1 ripe peach, thinly sliced
Honey
  • 2 tbsp honey
Butter
  • 2 tbsp butter, softened

Method
 

Assemble the sandwiches
  1. Butter one side of each sourdough bread slice, keeping the unbuttered sides ready for filling.
  2. Layer shredded white cheddar cheese and thinly sliced ripe peach on the unbuttered side of two bread slices, then drizzle with honey evenly over the top.
  3. Top with the remaining bread slices, placing the buttered side facing out so the bread crisps while grilling.
Grill and serve
  1. Heat a cast iron skillet over medium heat, then place the sandwiches in the skillet and grill for 3–4 minutes per side, until golden and the cheese is melted.
  2. Remove to a plate, slice, and drizzle with extra honey before serving.

Notes

For the cleanest melt, use ripe peaches that are thinly sliced so they cook quickly without steaming the bread. Store leftovers in the fridge up to 2 days; reheat in a skillet over medium-low until warmed through and the bread re-crisps. Freezing isn’t recommended because the peaches release moisture and can soften the bread. For a dairy-light option, use a plant-based shredded cheddar and honey still works the same way.
