Make the honey lime marinade
- Whisk together honey, fresh lime juice, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper until evenly combined, forming a glossy amber marinade.
- Toss the cubed chicken in the marinade until coated and let sit for 20 minutes to marinate.
Sear the chicken into a sticky glaze
- Heat a nonstick skillet over medium-high heat until hot.
- Add the chicken with the marinade to the skillet and cook 6 to 8 minutes, stirring occasionally, until cooked through and the sauce reduces to a sticky glaze.
Finish the rice and assemble bowls
- Fold lime zest and chopped cilantro into the warm cooked rice until the grains look speckled and fragrant.
- Dice the avocados and layer the rice, chicken, and avocado into bowls, fanning the avocado on top.
- Serve with lime wedges on the side so each bowl can be brightened to taste.
Notes
For the stickiest glaze, keep the heat at medium-high and stir occasionally so the sauce reduces without burning. Refrigerate leftovers in airtight containers up to 3 days; reheat chicken gently in a skillet or microwave until hot, then assemble with fresh lime wedges if possible. Freezing is not recommended because avocado texture breaks down. For a lower-carb option, swap jasmine/basmati rice for cauliflower rice and warm it with lime zest and cilantro.
