Brown the chicken
- Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the diced chicken and cook until browned and nearly cooked through, about 6-8 minutes.
Make and thicken the glaze
- Whisk together BBQ sauce, honey, and soy sauce, then pour over the chicken. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens into a sticky glaze and coats the chicken.
Serve
- Spoon the sticky honey BBQ chicken over cooked rice. Garnish with green onion and serve hot.
Notes
Pro tip: simmer uncovered so the sauce reduces into a thick, clingy glaze instead of staying thin. Store leftovers in the refrigerator up to 3 days; reheat gently in a skillet or microwave with a splash of water. Freezing is not recommended because the rice can soften and the glaze may lose some gloss. For a lighter swap, use chicken breast and shorten browning by 1-2 minutes to avoid drying.
