Taco-seasoned ground beef

  • 1 tbsp tomato paste
  • 1 tbsp hot honey

Method
 

Roast the sweet potatoes
  1. Preheat the oven to 375°F and line a baking sheet with parchment for easy cleanup.

  3. Roast at 375°F for 25 to 30 minutes until tender and caramelized, turning once halfway through if needed.
Cook the taco beef
  1. Sear the ground beef in a skillet over medium-high heat until browned, breaking it up as it cooks.
  2. Stir in taco seasoning and tomato paste, cooking just until evenly coated and fragrant.
  3. Add hot honey and cook until the beef looks glossy and the sauce clings to the meat.
Assemble the bowls
  1. Divide the roasted sweet potatoes and seasoned beef between bowls.
  2. Top each bowl with low-fat cottage cheese and sliced avocado.
  3. Drizzle with more hot honey and sprinkle with red chili flakes before serving.
