Ingredients

Chicken
  • 1 lb boneless chicken breast, diced Diced into bite-size pieces so it cooks through evenly.
Vegetables
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas Add near the end to keep bright color and tender-crisp bite.
Thickener & Seasoning
  • 3 tbsp flour Used to thicken the broth; whisk in gradually to prevent lumps.
  • 1 tsp thyme Adds the classic pot pie herb flavor.
  • Salt and pepper, to taste
Broth & Creaminess
  • 4 cup low-sodium chicken broth
  • 1 cup milk Milk creates the creamy finish in place of heavy cream.

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat a large pot over medium heat and sauté the onion, carrots, and celery until softened, about 5 minutes, stirring occasionally so they begin to turn fragrant.
Cook the chicken
  1. Add the diced chicken to the pot and cook until no longer pink on the outside, about 6-8 minutes, stirring to keep pieces cooking evenly.
Thicken the soup base
  1. Sprinkle in the flour and stir to coat everything evenly for 1 minute so the flour loses its raw taste.
Build the creamy broth
  1. Slowly whisk in the chicken broth, then the milk, stirring until smooth and free of lumps before the mixture looks glossy and cohesive.
Simmer until thickened
  1. Bring the soup to a simmer and cook for 15-20 minutes until the chicken is cooked through and the soup has thickened to a spoon-coating consistency.
Finish with peas and seasoning
  1. Stir in the frozen peas and thyme, season with salt and pepper, and simmer 5 more minutes until the peas are hot and tender.

Notes

Pro tip: when adding flour-thickened broth, whisk slowly and continuously to avoid lumps, especially as the mixture turns glossy. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently on the stovetop until steaming. Freezing is not recommended because milk can change texture when thawed. For a lighter swap, use unsweetened almond milk in place of dairy milk for a lower-fat option while keeping the creamy finish.
