Prep and bake dish
- Preheat the oven to 350°F and spread 1/2 cup enchilada sauce evenly in the bottom of a 9x13-inch baking dish, so the tortillas bake from the first layer up.
Brown beef and onion
- In a large skillet over medium-high heat, brown the ground beef with the chopped onion until the meat is no longer pink and the onion is soft, about 8 to 10 minutes.
Season the filling
- Stir in the taco seasoning and 1/4 cup enchilada sauce until well combined, 1 to 2 minutes, until glossy and evenly flavored.
Assemble enchiladas
- Spoon the beef mixture down the center of each flour tortilla, top with a little cheese, roll up snugly, and place seam-side down in the baking dish.
Sauce and cheese the top
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese, spreading so the surface is evenly covered.
Bake
- Bake at 350°F for 15 to 20 minutes, until heated through and the cheese is melted and bubbly.
Notes
For easier rolling, warm the tortillas briefly in the microwave (covered) so they stay flexible. Refrigerate leftovers in an airtight container for up to 3 days; reheat in the oven at 350°F until hot. Freezing is not recommended because tortillas can soften too much after thawing. For a lighter option, use reduced-fat cheese (and choose 90/10 or 93/7 beef) to cut calories while keeping the filling saucy.
