Sweetener & pumpkin
  • 1 cup granulated sugar
  • 1 can (15 oz) pumpkin puree Use plain pumpkin puree, not pumpkin pie filling.
Fat & leavening
  • 0.5 cup vegetable oil
  • 2 eggs
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 0.5 tsp xanthan gum (if not included in flour blend) Add only if your gluten-free flour blend does not already include xanthan gum.

Method
 

Prep and mix wet ingredients
  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Whisk together the pumpkin puree, vegetable oil, and eggs in a large bowl until smooth.
Combine dry ingredients

Bake
