  • 4 tomatoes, halved
Peaches
  • 3 peaches, halved and pitted
Aromatics
  • 1 onion, thick-sliced
  • 2 jalapenos
  • 3 garlic cloves, unpeeled
Herbs & Citrus
  • 0.25 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
Seasoning
  • 1 Salt, to taste

Method
 

Grill the produce
  1. Preheat a grill to medium-high heat so it’s ready for even charring. Keep the cooking surface hot before adding the vegetables and fruit.
  2. Grill the tomatoes, peaches, onion slices, jalapenos, and garlic until charred and softened, about 5-8 minutes per side, turning once for grill marks. Watch for dark char spots and tender edges.
Chop and finish
  1. Let the grilled ingredients cool slightly so they’re easier to handle, then peel the garlic and remove pepper seeds if a milder salsa is preferred. This helps control heat while keeping the smoky flavor.
  2. Roughly chop all the grilled ingredients and combine in a bowl to create a chunky salsa texture with visible char. Keep some larger pieces for a more rustic bite.
  3. Stir in the fresh cilantro and lime juice to brighten the smoky char and fruit sweetness. Mix until the cilantro is evenly distributed.
  4. Season with salt to taste and stir again to balance the flavors. Taste once more before serving, adjusting salt as needed.

Pro tip: For the most flavor, don’t rush the grilling—let the cut sides sit long enough to develop true char. Refrigerate in a sealed container up to 3 days; it can be served slightly warm or chilled for a refreshing version. Freezing is not recommended because the peaches and tomatoes lose texture.
