Ingredients
  

Chicken and seasoning
  • 2 lb boneless, skinless chicken breasts or thighs Use breasts for lean shredding or thighs for extra richness.
  • 1 salt, pepper, and garlic powder, to taste Season to taste; amounts vary by preference.
  • 1 packet taco seasoning Use a standard taco seasoning packet for best flavor.
Fiesta vegetables and beans
  • 2 can (10 oz) diced tomatoes with mild green chiles, drained Drain well so the sauce stays thick.
  • 1 can (15 oz) black beans, drained and rinsed Rinsing reduces excess sodium.
  • 1 can (15 oz) fiesta corn, drained Drain for a less watery sauce.
  • 0.25 cup chopped fresh cilantro Reserve for finishing after cooking.
Creamy finish
  • 4 oz cream cheese Use brick cream cheese and stir until fully melted.

Method
 

Season and build the crock
  1. Place the chicken in the slow cooker and season with salt, pepper, garlic powder, and taco seasoning, coating all surfaces with visible seasoning.
  2. Pour in the diced tomatoes with chiles, black beans, and corn, then stir until everything is evenly distributed.
Slow cook until shreddable
  1. Cover and cook on low for 6 to 8 hours, until the chicken is very tender and easily pulls apart with a fork.
  2. When there is about 30 minutes left in the cook time, shred the chicken directly in the slow cooker so the sauce clings to the strands.
  3. Stir in the cream cheese and continue cooking until it melts completely and the sauce turns creamy, with no lumps.
  4. Stir in fresh cilantro before serving, letting it stay green and fragrant over the warm chicken.

Notes

For best texture, shred the chicken when it’s still hot so it absorbs the tomato-corn sauce. Refrigerate leftovers in a sealed container up to 4 days; reheat gently on the stove or in the microwave until hot. Freeze up to 2 months, then thaw overnight in the fridge and reheat; cream cheese may slightly soften further on reheating. For a lighter option, use reduced-fat cream cheese while keeping the taco seasoning and veggies the same.
