  • 1 tbsp neutral oil
sweet thai chili and vegetarian oyster sauce
  • 1 sweet Thai chili sauce and vegetarian oyster sauce, combined for the sauce
cooked white rice
  • 4 cup cooked white rice
green onions
  • 1 green onions, sliced, for garnish
sesame seeds
  • 1 sesame seeds, for garnish
fried egg
  • 1 fried egg, optional

Method
 

Cook the crispy beef
  1. Heat 1 tbsp neutral oil in a large skillet or wok over medium-high heat until shimmering. Keep the pan hot so the beef browns instead of steams.
  2. Add 1 lb ground beef, 1 onion, diced, and 4 cloves garlic, minced, then break the beef apart with a spatula and spread it in an even layer. Cook until browned and crispy, about 10 minutes, stirring occasionally so you get caramelized edges.
  3. Pour the sweet Thai chili and vegetarian oyster sauce mixture over the beef and let it thicken and coat everything evenly. Cook until glossy and clinging, about 1 to 2 minutes.
Assemble the bowls
  1. Divide 4 cups cooked white rice among bowls and pile it so it forms a base. The rice should be hot so the topping stays cohesive.
  2. Spoon the crispy beef and its sauce generously over the rice. Add extra sauce so every bite has a shiny glaze.
  3. Garnish with sliced green onions and sesame seeds for color and crunch. Sprinkle evenly across each bowl.
  4. Top each bowl with a fried egg, if desired, before serving. Add it last so the yolk stays runny.

Notes

For maximum crisping, avoid stirring constantly during the first cook—let the beef sit long enough to brown, then stir and repeat. Store leftovers in an airtight container in the fridge for up to 3 days; reheat the beef and rice separately for best texture. Freezing isn’t recommended because the garnish and rice can soften. For a lighter option, use 93% lean ground beef or substitute turkey while keeping the same sauce glaze.
