  • 1.5 cup all-purpose flour
  • 0.33 cup granulated sugar
  • 1.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp salt
Wet ingredients
  • 0.67 cup milk
  • 2 eggs
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
Fruit
  • 2 apples, peeled and diced
For the glaze
  • 1 cup powdered sugar
  • 2.5 tbsp milk

Method
 

Prep and mix batter
  1. Preheat the air fryer to 375°F.
  2. In a large bowl, combine the flour, granulated sugar, baking powder, cinnamon, and salt.
  3. Add the milk, eggs, lemon juice, and vanilla extract, stirring just until moistened.
  4. Fold in the diced apples until just combined.
Air fry
  1. Scoop 1/4-cup portions onto parchment paper in the air fryer basket, spacing at least 1/2 inch apart.
  2. Air fry at 375°F for 8 minutes until the tops look set and slightly puffed.
  3. Flip the fritters and cook at 375°F for 3 minutes more until golden and cooked through.
Glaze and serve
  1. Whisk the powdered sugar and milk together until smooth.
  2. Drizzle the glaze over the warm fritters before serving, so it melts lightly on the surface.

Notes

For the crispiest edges, don’t overmix after adding the apples—stop as soon as you no longer see dry flour. Serve warm for the best crackly exterior; store leftovers in the fridge up to 2 days and re-crisp in the air fryer at 350°F for 3–4 minutes. Freezing isn’t recommended because the apple texture softens. For a dairy-light option, use unsweetened plant milk in both the batter and glaze.
