Ingredients
Method
Combine the corn mixture
- Add the southwest-style corn, fire-roasted diced tomatoes, diced jalapenos, shredded sharp cheddar cheese, and sliced green onions to a large bowl. Mix until the add-ins are evenly distributed.
Make the creamy dressing
- Whisk the mayonnaise, sour cream, salt, garlic powder, onion powder, dried parsley, pepper, and chili powder in a small bowl until smooth. The dressing should look fully combined with no visible spice clumps.
Assemble and chill
- Pour the dressing over the corn mixture and stir well to combine. Stir until the dip is thick and uniformly coated.
- Chill the dip for at least 30 minutes to let the flavors meld before serving. Serve cold with chips or crackers.
Notes
For the best texture, drain the corn, tomatoes, and jalapenos thoroughly so the dip stays thick and scoopable. Refrigerate in an airtight container for up to 4 days; freeze is not recommended due to possible texture changes in the dairy. For a gluten-free version, serve with gluten-free chips or crackers.
