Assemble the banana sandwiches
- Slice the bananas into rounds and pat dry with a paper towel, then set aside in an even layer so the peanut butter won’t slide.
- Spread a small dollop of peanut butter onto half the banana rounds, then sandwich with the remaining rounds to form bite-size pairs.
Freeze until firm
- Freeze the banana sandwiches on a parchment-lined sheet pan for at least 1 hour until firm to hold their shape during dipping.
Make the chocolate coating
- Melt the chocolate chips with coconut oil in the microwave in 20-second bursts, stirring between each, until smooth and glossy.
Dip and refreeze
- Dip each frozen banana sandwich into the melted chocolate, making sure it’s coated on the outside, then return to the sheet pan.
- Freeze until the chocolate hardens, about 15 minutes, then serve straight from the freezer.

Pro tip: Freeze the banana sandwiches solid before dipping so they hold together in the warm chocolate, and work quickly while dipping because the frozen banana can start to soften at room temperature.
