Ingredients

egg
  • 8 large eggs Use room-temperature eggs if possible for more even scrambling.
cheddar
  • 1 cup shredded cheddar cheese Reserve a small handful to sprinkle on top of the filling if desired.
salsa
  • 0.5 cup salsa Choose a medium heat salsa so it stays balanced with the eggs and cheese.
sausage
  • 1 cup cooked breakfast sausage or bacon, crumbled Use fully cooked sausage for quick campfire reheating.
tortillas
  • 6 large flour tortillas Warm just enough to roll without tearing.
seasoning
  • 1 salt and pepper, to taste Add gradually while scrambling, then taste and adjust.

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method

Scramble and assemble
  1. Scramble the eggs in a cast iron skillet over medium heat until just set, seasoning with salt and pepper, about 7-10 minutes, and stir continuously to keep them soft and fluffy.
  2. Warm the large flour tortillas slightly to make them pliable, about 20-30 seconds per side over medium heat, so they flex without cracking.
  3. Divide the scrambled eggs, shredded cheddar cheese, salsa, and cooked breakfast sausage or bacon, crumbled among the tortillas, keeping the filling centered so the burritos roll evenly.
  4. Roll each tortilla tightly into a burrito, folding in the ends, and press gently at the seam so it holds during freezing and reheating.
Freeze and reheat
  1. Wrap each burrito individually in foil and freeze until ready to use, labeling the package if you’re making multiple batches.
  2. Reheat over campfire coals or a grill for 10-15 minutes, turning occasionally, until warmed through and steaming at the center.

Notes

Pro tip: For clean reheats, wrap burritos tightly in foil to prevent freezer burn and keep the tortilla from drying out. Store frozen burritos up to 2-3 months; thaw overnight in a cooler for faster morning reheating (no need to thaw if you’re using the full 15 minutes). Freezer yes. Dietary swap: use turkey sausage for a leaner version without changing the method.
