Ingredients

Baguette slices
  • 1 baguette Slice the baguette into rounds for even toasting.
Olive oil
  • 3 tbsp olive oil Divide the olive oil between brushing the bread and tossing the tomatoes.
Cherry tomato topping
  • 2 cup cherry tomatoes Halve for faster roasting and easier juicing.
  • 2 clove garlic Minced so it distributes through the tomatoes.
  • 0.5 cup fresh basil Tear leaves for better coverage over the bruschetta.
  • 1 tbsp balsamic glaze Drizzle right before serving for the best sheen and flavor.
  • 1 flaky salt Add to taste; finish the assembled bruschetta.

Equipment

  • 1 sheet pan

Method

Toast the baguette
  1. Preheat the oven to 400°F. Brush baguette slices with 1½ tbsp olive oil and toast on a sheet pan for 6–8 minutes, until golden and crisp, with a visibly browned edge.
  2. Transfer toasted slices to a serving area so they stay crisp while you roast the tomatoes.
Roast the tomatoes
  1. Toss halved cherry tomatoes with remaining 1½ tbsp olive oil, minced garlic, and a pinch of salt. Spread in a single layer so juices can bubble without steaming.
  2. Roast the tomatoes for 12–15 minutes at 400°F, until they burst and release juices, indicated by collapsed skins and glossy, pooled liquid.
Assemble and serve
  1. Spoon burst tomatoes over the toasted baguette slices. Aim to include both tomatoes and their juices for maximum bite.
  2. Top with torn fresh basil, drizzle with balsamic glaze, and finish with flaky salt to taste right before serving, for fresh aroma and contrast.

Notes

Pro tip: keep the toasted bread dry and crisp by assembling immediately after roasting. Store leftover tomato topping in an airtight container in the refrigerator up to 3 days; re-toast bread separately and spoon topping on right before eating (freeze topping for up to 2 months, then reheat until hot). For a dairy-free option, this recipe already is—just use balsamic glaze without any added dairy, if applicable.
