Ingredients

Butter
  • 0.5 cup butter Brown until amber and nutty; cool slightly before mixing.
Heavy cream
  • 2 cup heavy whipping cream Whip to stiff peaks for a rich, creamy no-churn texture.
Sweetened condensed milk
  • 1 can (14 oz) sweetened condensed milk Adds body and sweetness without an ice cream maker.
Vanilla
  • 1 tsp vanilla extract
Pecans
  • 1 cup pecans, toasted and chopped Toast first for deeper, caramelized nuttiness; reserve some for topping.
Salt
  • 0.25 tsp salt Balances sweetness and enhances browned butter flavor.

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method

Brown the butter
  1. Melt the butter in a skillet over medium heat, swirling occasionally, until it turns amber and smells nutty, about 5-7 minutes. Watch the foaming closely—remove as soon as it’s nutty and amber.
  2. Let the browned butter cool slightly, about 5 minutes, so it blends smoothly without flattening the whipped cream.
Whip and mix the base
  1. Whip the heavy whipping cream to stiff peaks in a large bowl until it holds sharp ridges. Chill briefly if it starts to soften.
  2. Whisk the sweetened condensed milk, vanilla extract, salt, and cooled brown butter together until smooth, glossy, and free of streaks.
  3. Fold the whipped cream into the brown butter mixture until no white streaks remain, using gentle strokes to keep the volume.
Add pecans and freeze
  1. Fold in the toasted chopped pecans, reserving a few tablespoons for topping. Keep folding just until evenly distributed.
  2. Pour into a loaf pan, sprinkle with the reserved pecans, and freeze for at least 6 hours before scooping. Freeze until firm, then scoop and serve.

Notes

Pro tip: once the butter starts foaming, stir and monitor constantly—its color can shift from browned to burnt in seconds. Toast the pecans in a dry skillet for 3-4 minutes until fragrant before chopping. Store in the freezer in a covered container for up to 2 months; thaw 5-10 minutes for easier scooping. Freezer yes—no churn needed. For a dairy-light swap, use a high-fat coconut cream substitute for the heavy cream and keep the condensed milk as written for best texture.
