  • 0.5 cup milk 2% milk works best; use in place of heavy cream.
  • 2 tbsp brown sugar apple syrup
  • 0.5 tsp cinnamon For the foam infusion and flavor.

Method
 

Make the apple crisp cold foam
  1. Combine the heavy cream (or milk), brown sugar apple syrup, and cinnamon in a small bowl or frothing pitcher.
  2. Whip with a milk frother or hand mixer until thick, light, and foamy, about 1-2 minutes, until it holds its shape.
Build the iced coffee
  1. Pour your favorite iced coffee over ice in a serving glass.
  2. Spoon the apple crisp cold foam on top so it floats as a thick ivory layer.
  3. Finish with a sprinkle of cinnamon sugar for a visible dusting over the foam.

Notes

Pro tip: whip just until thick and pourable—overwhipping can make the foam look grainy and won’t float as nicely. Store any leftover foam in the fridge up to 24 hours, then rewhip briefly before using; freezing is not recommended. For a lighter option, use 2% milk instead of heavy cream while keeping the whip time to 1-2 minutes for best stability.
