Mix and shape
- Stir together shredded coconut, chocolate protein powder, melted coconut oil, and honey until a sticky dough forms, with the mixture looking evenly speckled and clumping together.
- Roll the mixture into 20 small balls, pressing an almond into the center of each so the almond is fully embedded and the surface looks smooth.
Chill and finish
- Refrigerate the balls for 15 minutes to firm up, until they hold their shape when gently pressed.
- Drizzle with melted chocolate before serving, using a thin stream so each ball gets a light chocolate ribbon and sets back up quickly.

Pro tip: If the dough feels dry, add 1–2 tsp warm coconut oil (just until it becomes sticky). Store in an airtight container in the refrigerator for up to 5 days; freeze for up to 2 months. For a dairy-free option, choose dairy-free chocolate protein powder and dairy-free chocolate chips if needed.
