  • 1 cup shredded coconut, unsweetened
  • 0.5 cup chocolate protein powder
  • 0.25 cup coconut oil, melted
  • 3 tbsp honey
  • 24 whole almonds
  • 0.25 cup mini chocolate chips, melted, for drizzle

Method
 

Mix and shape
  1. Stir together shredded coconut, chocolate protein powder, melted coconut oil, and honey until a sticky dough forms, with the mixture looking evenly speckled and clumping together.
  2. Roll the mixture into 20 small balls, pressing an almond into the center of each so the almond is fully embedded and the surface looks smooth.
Chill and finish
  1. Refrigerate the balls for 15 minutes to firm up, until they hold their shape when gently pressed.
  2. Drizzle with melted chocolate before serving, using a thin stream so each ball gets a light chocolate ribbon and sets back up quickly.

Notes

Pro tip: If the dough feels dry, add 1–2 tsp warm coconut oil (just until it becomes sticky). Store in an airtight container in the refrigerator for up to 5 days; freeze for up to 2 months. For a dairy-free option, choose dairy-free chocolate protein powder and dairy-free chocolate chips if needed.
